Davinder's Gluten Free Vegan Granola

Ingredients:

 

1/4 x cup sunflower seeds

1/4 x cup pumpkin seeds

Pinch of pink Himalayan salt/ vanilla/ cinnamon

1/2 x cup mixed nuts (almonds/ cashews/ pecans/ walnuts

1 x Tbsp each chia & sesame seeds

2 x Tbsp coconut oil

1/4 x cup desiccated coconut

2 x Tbsp agave syrup

 

DIRECTIONS

Put nuts into a food processor & pulse for just a short while to roughly chop all ingredients,

Warm the coconut oil in a pan, add the sesame, chia seeds & agave syrup giving it a little stir whilst chanting "Om Mani Padme Hum",

Add the nut mixture, salt, vanilla extract & cinnamon mixing everything thoroughly,

Place in a pre-heated oven, 180f for 10-15mins until golden or gently on medium heat on the hob for 5mins

Allow to cool & then add a sprinkling of dried sour cherries/ yacun cacao nibs/ dried apricots/ coconut flakes/ goji berries.

Store in an airtight jar for months! - Enjoy with non-dairy oat milk/ berries/yogurt etc etc..
